When 2020 rolled around, we thought it was going to be the best year ever. But needless to say, it hasn’t. So we decided to throw a Taco Tuesday fiesta to celebrate, well, the existence of tacos.
We generally don’t celebrate Cinco de Mayo, for the obvious reasons. We aren’t Mexican. I feel it’s low key disrespectful to take a culture and turn it into an excuse to get drunk. Living in Southeast Texas gave us an added respect for the Hispanic culture, and the incredible food that can’t be found anywhere else. Seriously, someone go kidnap the Tacos La Bamba staff and bring them to Charleston, because that place was heaven on Calder Street. But I digress.
Nonetheless, Taco Tuesday falling on Cinco de Mayo needed to be celebrated. Even if that meant hosting an Ultimate Taco Tuesday mini fiesta right at home for out little trio.
We usually have a full fixing spread, but this time it was bumped up a notch. I even made some plant based bits! Instead of just refried beans, we also had black beans (seasoned with garlic and cumin). We also upgraded plain corn for fiesta corn (it comes with peppers). We don’t have consistent serving bowls for a dozen fixings, but the fun colors added to the atmosphere.
Paper Banner
The quickest way to add festive decor is a banner along the buffet. And the best part, it’s super easy to make. Sassy absolutely loved it hanging up, and I have a sneaking suspicion it will end up in her bedroom later.
Cut four pieces of paper into 1in strips. I used a red, yellow, orange, and green, and cut them long ways. Then use a stapler to attach a loop, one at a time. The entire banner took under ten minutes, and ended up about ten feet long.
School Night Taco Tuesday Margs
There are so many fun variations for drinks on Taco Tuesday! Don’t waste your money (or calories) on the margarita mix. You don’t need that. Classic margaritas have lime juice, orange liqueur, and tequila with a salt rimmed glass. We’re not celebrating tequila Tuesday, so we don’t have to worry about that. Instead, pull in the lime and citrus, and add some fizzy to replace the burn.
- Juice of 2+ limes
- Juice of 1 orange, or 1/2 grapefruit
- 1 bottle of seltzer
Mix everything in a pitcher and stir to combine. If you’re craving a rimmed glass, use colored sugar for a festive alternative.
Pro Tip: This could easily be switched up for a faux-jito as well. Just add muddled mint and some agave nectar or honey.
School’s Canceled Anyway Taco Tuesday Margs
Same as above, but instead of seltzer, sub a can of White Claw. Lime would be the obvious flavor, but raspberry or grapefruit is also delicious.
